Millet, Ragi or Madua flour is widely used as staple food in Uttarakhand. Chapattis are made from its madua flour are consumed especially during winter with ghee with Gud (Jaggery) or Masala Noon (Specially prepared Salt). The poppd grain is mixed with honey and melted jaggery in proper proportion to make iron and energy rich “Laddu or Ladoo” consumed during winter.
